The Tastiest Treats for National S’mores Day

On August 10, celebrate National S’mores Day with these delicious desserts. These three recipes are sweet, simple, and don’t require a backyard bonfire.

S’mores Cupcakes
Recipe from Real Simple

For the cupcakes
1 cup graham cracker crumbs
1 cup all-purpose flour, spooned and leveled
1 1/2 teaspoons baking powder
1/2 teaspoon fine salt
1/2 cup (1 stick) unsalted butter, at room temperature
3/4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup whole milk

For the ganache
1/3 cup heavy cream
6 ounces bittersweet chocolate, chopped
For the topping
12 large marshmallows large marshmallows

For the cupcakes
Heat oven to 350° F. Line a standard 12-cup muffin tin with paper liners. Whisk together the graham cracker crumbs, flour, baking powder, and salt in a bowl.

Beat the butter and sugar in a separate bowl with an electric mixer.

Beat in the eggs, and then the vanilla.

Reduce mixer speed to low and add the dry ingredients and milk alternately.

Mix until ingredients are combined.

Put batter in paper cups. Bake for 20 to 24 minutes.

Cool in the tin for 10 minutes; transfer to a wire rack to cool completely.

For the ganache
Meanwhile, bring the cream to a boil in a small pot. Remove from heat, add the chocolate, and let sit for five minutes. Whisk to combine. Let cool slightly.

For the topping
Place the marshmallows on a parchment-lined baking sheet, 2½ inches apart. Bake on the top rack until golden and deflated, 6 to 10 minutes. Let cool.

Assemble the cupcakes: Divide the ganache among the cupcakes, and then top each with a toasted marshmallow. Let sit until the ganache is almost firm.

S’mores Chocolate Chip Cookies
Recipe from Food Network

1 cup unsalted butter
3/4 cup packed light brown sugar
3/4 cup granulated sugar
2 large eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
Pinch salt
3 cups all-purpose flour
1 1/2 cups coarsely-smashed graham cracker pieces (from about 1 sleeve), plus 36 small graham cracker squares
Marshmallow creme, for topping cookies
One 8-ounce milk chocolate bar, broken up

Preheat the oven at 350° F.

Beat together the butter and sugars in a large bowl until smooth and fluffy, then beat in the eggs. Add the baking soda, vanilla and salt to the butter mixture, mixing just until combined. Add the flour and smashed graham crackers and slowly mix together until combined.

Drop tablespoon-sized dollops of batter two inches apart on ungreased baking sheets. Dollop some marshmallow creme onto each of the cookies, and press a piece of chocolate and graham cracker into the marshmallow.

Bake for 7 to 8 minutes.

S’mores Bars
Recipe from Taste of Home

1/2 cup butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
3/4 cup graham cracker crumbs
1 teaspoon baking powder
1/8 teaspoon salt
5 milk chocolate candy bars
1 cup marshmallow creme

In a large bowl, cream butter and sugar. Beat in egg and vanilla. Combine the flour, cracker crumbs, baking powder and salt; gradually add to creamed mixture. Set aside 1/2 cup for topping.

Press remaining mixture into a greased 9-in. square baking pan. Place candy bars over crust; spread with marshmallow creme. Crumble remaining graham cracker mixture over top.

Bake at 350° for 25-30 minutes or until golden brown.

Cool and cut into bars.
