Three Recipes to Celebrate National Ice Cream Day

In celebration of National Ice Cream Day on July 19, teach your kids how to make a special treat. Here are three recipes for all types of ice cream lovers.

Fig and Chocolate Chunk Ice Cream

Ingredients
5 ounces ripe fresh figs, cut into 1/2-inch pieces
1 tablespoon sugar
3 ounces dark chocolate, finely chopped (about 1/2 cup)
Vanilla-Custard Ice Cream Base (see ingredients and instructions below)

Instructions
Chill a pan in a freezer for at least 10 minutes. Sprinkle figs with sugar. Let stand for about 5 minutes.

Fold figs and chocolate into custard base with a rubber spatula. Freeze and churn in an ice cream maker. Then transfer to pan. Cover with plastic wrap and freeze until hardened.

Vanilla-Custard Ice Cream Base

Ingredients
1 cup whole milk
1 1/2 cups heavy cream
1 vanilla bean, split and scraped
6 large egg yolks
3/4 cup sugar
1/4 teaspoon coarse salt

Instructions
Combine milk and cream in a medium saucepan. Add vanilla seeds and pod.

Bring mixture to a simmer over medium-high heat.

Whisk together egg yolks, sugar, and salt in a large bowl.

Gradually whisk in half of milk mixture. Pour egg-milk mixture back into pan and cook over medium heat, stirring constantly.

Pour custard through a fine sieve into a bowl set in a larger bowl of ice water; discard vanilla pod.

Cover and refrigerate until cold, at least 1 hour.


Raspberry Cheesecake Ice Cream

Ingredients
4 ounces cream cheese, softened
1 cup white sugar
2 cups raspberries, pureed and strained
1 cup heavy whipping cream
1 cup whole milk
1/4 teaspoon kosher salt

Instructions
In a large mixer, whisk cream cheese until smooth.

Add sugar and combine. Slowly whisk in cream and milk.

Add strained raspberries and combine until mixture is a uniform color.

Pour mixture into ice cream maker and process according to directions.

Once frozen, remove from ice cream maker and transfer to a container and freeze for at least 2 hours before serving.


Strawberry Ice Cream Sandwich
From Real Simple

Ingredients
1/2 pint strawberry ice cream, softened
16 small crisp cookies

Instructions
Sandwich the ice cream between the cookies. Serve immediately or freeze.
