Hearty Veggie Chili:
Ingredients:
1 tbsp olive oil 1 onion, diced
2 garlic cloves, minced
1 bell pepper, diced
1 zucchini, diced
1 can (15 oz) black beans, drained
1 can (15 oz) kidney beans, drained
1 can (15 oz) diced tomatoes
1 cup vegetable broth
2 tbsp chili powder
1 tsp cumin
Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat.
Sauté onion, garlic, and bell pepper until softened (about 5 minutes).
Stir in zucchini, beans, tomatoes, and vegetable broth.
Add chili powder, cumin, salt, and pepper.
Simmer for 20 minutes, stirring occasionally.
Serve with your favorite toppings like cheese, avocado or sour cream. Enjoy!
